Mahi Mahi is an extremely versatile fish with a firm texture that remains tender and extremely flaky when cooked. It performs well on the grill and is often pan-seared, sautéed, baked, broiled, and fried. It is a great source of lean protein and extremely heart-healthy because it is very low in fat and high in omega-3 fatty acids.

A simple and delicious way to prepare this white fish. Served with grilled asparagus or other vegetables of your choice. Paired with a glass of Vinho Verde Estreia. Perfect for Summer, Grilling Season and 4th of July!
INGREDIENTS
- 3 wild caught MahiMahi fillets
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp paprika — smoked could be used
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- a pinch cayenne pepper
- 1 tsp dried oregano
- 1 tsp cumin
- 2 tbsp lemon juice
INSTRUCTIONS
- Preheat a gas grill to medium-high heat. In a small bowl combine the spices.
- Brush fillets with olive oil on both sides. Sprinkle with the seasoning on both sides of the fish.
- Grill for 4-5 minutes per side, until golden.
Drizzle with lemon juice. Serve.
Remember in the 1980’s when Mahimahi was called Dolphinfish. It caused such an uproar with the public thinking restaurants were serving dolphin! To avoid confusion (and hysteria!), the fish now is marketed as Mahimahi, and to clarify, it is not related to a dolphin in any way.
Mahi-mahi has lean flesh with a mild, sweet flavor profile, moderately firm texture and large, moist flakes. The skin is thick and should therefore be removed before cooking. Fresh Mahi Mahi has translucent pinkish flesh and a bright red bloodline. If the bloodline is brownish or dull then the fish is old.
