Grilled Tuna Loin

Place tuna loin in shallow dish and add 2 tbsp. of olive oil and use to rub over tuna loin add salt and pepper (any other herb or spice you like, use a small amount as tuna absorbs flavors readily.)  Heat grill as hot as possible and place tuna loin on grill for five minutes on each side (there are three sides).  Remove from grill and serve.  Note:  smaller loins can be cooked for three minutes a side. Many sauces can be served over the loin or on the side. Roasted Raspberry Chipotle Sauce is one of my favorites.  Also, many teriyaki marinades, etc.
